木杉十週年 Musann Blanc Vintage 2023 木杉白葡萄酒

100% 木杉，來自埔鹽莊園，2023 年產季／轉色期至梅雨季前梳果平衡產量。釀酒團隊於綠果階段採收製作 verjus 綠汁，並於較乾燥的七月成熟期讓葡萄靜默熟成。


酒液特色：
  • 釀造比例與方式：
     • 65% 採整串榨汁發酵（低溫慢發酵、野生酵母）
     • 22% 採整串腳踩發酵（pigeage 泡皮接觸）
     • 13% 採 verjus 綠汁輔助入釀
  • 熟成媒介：
     • 三種培養容器：1/3 法國小型舊橡木桶、1/3 不鏽鋼桶、1/3 陶甕
     • 2 個月 bâtonnage（攪桶以提升口感細膩度）
     • 6 個月 sur lie 酒泥靜放
  • 風味與香氣：酒款展現木杉的純粹美態與層次深度，香氣中可感受到微妙果香、草本與礦物氣息；口感柔順融合，結構清晰卻不失活力。飲下後能感受到它在身心間流動的輕盈律動，與穩定而內斂的力量感。

酒精濃度    11.5% 

釀造原料    100% 木杉葡萄，一年一收，2023年7月夜晚低溫手工採收
